If your garden is producing more than you can eat, try canning. Canning your garden’s bounty helps you plan ahead for winter meals, said Mary Russ, home eco nomics extension agent. Also, canned foods keep well — even if the power goes out. If you do can green beans or any other low-acid food, be sure to do it safely, cautioned Mrs. Russ. Low acid foods must be processed in a pressure canner. Only in a pressure canner can the temperatures get hot enough to kill dangerous bacteria that like to grow in these types of foods sealed up with no oxygen in the jar. Pressure canners, at ten pounds of pressure, get the temperature up to 240 degrees Fahrenheit. Boiling water only reaches 212 degrees Fahrenheit. The trick is to get the food in the jars hot enough for a long enough period of time to destroy those dangerous bacteria, said Mrs. Russ. Green beans should be processed at ten pounds pressure for 20 minutes for pint-size jars, or 25 minutes for quart-size jars. C, Fourth of July Festival will feature four fun-filled days of music, games, arts, crafts, dancing and more. The opening ceremony for the fes tival is scheduled for Thursday, July 1. Southport Baptist Church will host a community-wide church ser vice beginning at 7:30 pan. Beach Day will be the featured event on Friday, July 2. Centered at Long Beach’s occonfront cabana, visitors can participate in surfing contests, volleyball, sandcasde building, watermelon eating, horse shoes and tug-o’-war. A beach con cert and shag contest featuring The Fabulous Kays will begin at 6 pan. The Freedom Run along the his toric Southport waterfront kicks off activities for Saturday, July 3. They include the children’s field events at the Fort Johnston Garrison, Heritage House next door at the Southport Community Building and military exhibits at Waterfront Park. D. Arndt of U. S. Coast Guard Sta tion Oak Island will serve as parade marshal. Brynn Thayer of the ABC television series "Matlock' will be featured as the 1993 festival queen. (See related story.) Heritage House takes a look at history of Southport area Antiques, collectibles and curios will be among the items on display at the 28th annual Heritage House, This year’s event will be held from 1 to 6 p.m. July 3-5 at the Southport Community Building. Sponsored by the Southport Woman's Club, Heritage House has become a traditional part of the N. C. Fourth of July Festival. It fea tures a mini-museum of local aititacts, memorabilia, furniture. Uniformed guides give tours of Fort Fisher site The Baltic of Fort Fisher is being brought to life this summer with the help of a uniformed Union or Con federate soldier. Staff members at the state historic site dressed in period costumes guide visitors around the Civil War fort which kept the port of Wilming ton open to blockade runners sup plying Confederate armies until the last few months of the war. The fort fell in January, 1865, after the largest naval bombardment to that time in history. The Mary Halloway Memorial Seasonal Interpreter Program offers half-hour tours at 9:30 and 11 am. and 1:30 and 3 p.m. Wednesday through Saturday. Sunday tours are at 1:30 and 3 p.m. Guides in modem clothes give tours at the same time on Mondays and Tuesdays. The tour trail, shaded by gnarled live oaks, meanders in front of the earthworks. The response to the re quest from the Southport Woman’s Club for organizations to exhibit their histories has been successful with nearly 20 responding, from Dosher Memorial Hospital volunteers to the Woodbine Garden Club.
